24 Lotus Biscoff biscuits
80g date syrup

280g Philadelphia โฃโฃ
200ml cream โฃโฃ
5ml vanilla extract โฃโฃ
40g date syrup โฃ

Mixed nuts โฃ
Date syrup โฃ
Date jam โฃ
Date sugar โฃ

Bowl Filled With Date Sugar Toppings

1. Crush the lotus biscuits by placing them inside a bag and going over with a rolling pin or use a pestle and mortar to eliminate plastic bag use as I did. You want to leave some larger chunks for texture (save some for decoration) โฃ
2. Pour date syrup onto biscuits and mix wellโฃ
3. Divide biscuit base equally into ramekins (I made 7 with my mix) filling them up a third of the way. โฃPress down firmly with the back of a teaspoon to ensure the mixture is compact
4. Whip cream cheese with vanilla extract and date syrup until smoothโฃ
5. Add in cream and whip until everything is combined together well โฃ
6. Spoon out mixture equally between ramekins until they are full to the top โฃ
7. Leave in fridge to set for 3 hours or ideally overnight โฃ
8. Decorate with nuts, date syrup or lotus biscuits
