Best Lentil and Kale Stew Recipe for a Meat & Gluten-Free Day

Lentil and Kale Stew

Another plant based and simple recipe for days that you want to go meat free. Gluten free, full of protein,  fiber, minerals and vitamins - this stew is the perfect choice.

Cook Time 20 mins

Total Time 25 mins

Servings: 4 


Ingredients:

  • 1.5 cups lentils
  • 2 medium diced potatoes
  • 2 medium diced carrots
  • 2 diced onions
  • 3 minced garlic cloves
  • 2 handfuls of chopped kale
  • 2 tbs tomato paste
  • 2 tsp cumin powder
  • 2 tbs olive oil
  • Salt and pepper
  • Juice of 1 lemon
  • 1 cup vegetable broth
  • Water as needed 3 to 4 cups

Instructions

  1. In a large pan heat 2 tbsp olive oil.
  2. Sautee onions and garlic. 
  3. Add potatoes and carrots. 
  4. The add tomato paste, salt, pepper, vegetable broth, lentils and water. Let it cook. 
  5. Once boiling,  reduce heat to simmer for 15 mins until the lentils are cooked well.
  6. Then add cumin and kale and cook it for another 10 mins. 
  7. Add lemon juice before serving.
